In just a couple hours I was able to prepare a pretty good stash for my freezer. Here's what I accomplished:
I started out by putting a roasting pan full of potatoes in the oven for Hashbrowns (from Heavenly Homemaker's recipes).

While the potatoes were busy baking, I got busy making the Easy Beef and Cheese Burritos. I doubled the ground beef and froze a pound of the seasoned beef in addition to making burritos.
And instead of just watching the ground beef brown (say that three times fast!), I mixed up the Pancake batter and griddled up a batch of pancakes.

Next on the list, Homemade Mayonnaise. This was quick and easy, but messy! Then splattered with mayo, I whipped up a batch of Chocolate Chip Cookies. I only froze half the cookie dough as the kids and hubby wanted some fresh baked cookies, like now!
The baked cookies were gone before I could snap a picture! So, here's a pic of the frozen cookies (minus the one I ate, love me some cookie dough!)
Not bad for a couple hours in the kitchen. It's such a comfort to know that my freezer is ready to come to my rescue on those nights when "there's nothing to eat"! You know, I get so inspired/jealous when I read others' freezer cooking posts, I just need to bite the bullet and schedule a day! What a treat to have a freezer full of ready-to-go foods. And I've been wanting to try those hashbrowns from HH forever, they look sooo good!
