Easy Homemade Maple Syrup!


Okay, so this isn't real maple syrup. If you want the real stuff you'll have to talk to my Dad. He actually tapped some trees this spring and made some authentic (and delicious) maple syrup. Anyway, I wanted some homemade syrup, the kind with no mystery ingredients like the store bought stuff. Unfortunately, tapping trees didn't make the to-do list this spring. Maybe next year. So I began my search for a quick and easy recipe and found just what I was looking for in the book "Cheaper and Better" by Nancy Birnes.  I was kinda surprised that it turned out so good!  I poured the homemade syrup into an empty "store-bought" bottle and the kids never even noticed!

Ingredients:

2 cups water
4 cups brown sugar
2 tsp maple extract

Bring water to rapid boil.
Pour in all of the brown sugar at once and stir until completely dissolved.
Remove from heat and stir in maple extract.
Pour into sterilized jar and let stand for 24 hours at room temperature before using.  Store in refrigerator for up to 6 months.

Easy and Delicious!

Isn't it funny how food sparks so many memories. I love making pancakes for my kids in the morning because of the memories I have of my mom doing the same. She always made us a "hot" breakfast before school and pancakes were a favorite. My brother and I would have a contest to see who could eat the most pancakes! Ah, memories...
