Two ingredients is all you need to make these yummy pumpkin muffins! So easy! A yellow cake mix and a can of pumpkin, that's it. Just mix the pumpkin and the cake mix together. No oil, no water, no eggs. Spoon the batter into cupcake papers in a muffin tin and bake at 350 degrees for 20-25 minutes. I topped my muffins with some cream cheese frosting.....oh so good! I love the simplicity of this recipe. And the warm pumpkin aroma that filled the kitchen was an added bonus.
